Grilled Chicken, Avocado, & Grapefruit Salad


Ingredients
For the chicken:
¼ cup olive oil
6 tablespoons grapefruit juice
1 teaspoon kosher salt
½ teaspoon ground black pepper
4 skinless, boneless chicken breasts
For the dressing:
2 tablespoons grapefruit juice
¼ cup white wine vinegar
½ cup oil (I used canola)
2 tablespoons sugar
1 teaspoon kosher salt
½ teaspoon ground ginger


For the salad:
8 ounces romaine lettuce
1 cup (1/2 pint) cherry tomatoes, cut in half
1 avocado, diced
1 whole florida grapefruit, cut into segments, membranes removed
½ cup candied pecans, chopped


Instructions
To grill the chicken:
1. Combine the oil, grapefruit juice, salt and pepper and pour over the chicken. Let it marinate for 13
hours.
2. Grill or broil chicken on high for about 78
minutes per side, until cooked through. Set aside while preparing
salad.


To prepare the dressing:
1. Combine all ingredients in a small bowl. Whisk to combine. Set aside.
To assemble salad:
1. Combine lettuce, tomatoes, avocado and grapefruit segments in a bowl.
2. Dice or slice the chicken and add to the bowl. Add the dressing and nuts.
3. Toss until everything is evenly distributed. Enjoy immediately.
