Grilled Chicken Caprese Ingredients 4 chicken breasts olive oil 2 - 3 of your favorite type of tomatoes fresh mozzarella, enough for a couple slices per piece of chicken large bunch of fresh basil, ripped up (roughly 12 leaves) balsamic vinegar - 2-3 TBS salt & pepper to taste Instructions Set a grill to medium heat. Rub the chicken breasts with olive oil and season with salt & pepper. Cook roughly 5 minutes per side until cooked through. Meanwhile in a bowl add in your tomatoes, basil, and drizzle with the balsamic vinegar, salt & pepper. Mix by hand and set aside. The last 1 - 2 minutes of grilling add a slice or 2 of mozzarella to each piece to have it melt a bit. Once the chicken is cooked, remove, and top with remaining caprese.
