Simple Southern Coleslaw 1 cup mayonnaise 1 teaspoon (or more) black pepper 2 tablespoons sugar (optional) 1 teaspoon celery salt 1 teaspoon dried mustard 4 tablespoons vinegar 1 head cabbage ½ teaspoon salt Whisk together mayonnaise, black pepper, sugar, celery salt, dried mustard and vinegar in a small bowl. Grate the cabbage in a food processor. Place in a colander or sieve and sprinkle with the salt. Let it sit and drain for at least 20 minutes, then pat dry with paper towels. Put the grated cabbage in a large bowl and stir in the sauce. If the cabbage is smallish, you may need only about 2/3 of it. Be careful not to over-sauce. Add more salt and black pepper if needed. If you prefer a more colorful slaw, grate a carrot or two and a green pepper along with the cabbage. A pinch of horseradish can be a nice touch, too.
