117 - Grilled Italian Sausage with Sweet and Sour Peppers & Onions

INGREDIENTS:
1 tablespoon vegetable oil
1 large onion, sliced into 1/4-inch strips (about 2 cups)
2 red bell peppers, stem and core removed, sliced into 1/4-inch strips
2 green bell peppers, stem and core removed, sliced into 1/4-inch strips
3 tablespoons apple cider vinegar
3 tablespoons sugar
Kosher salt and freshly ground black pepper
2 pounds sweet or hot Italian sausage
Buns for serving
DIRECTIONS:
Heat oil in a large skillet over medium-high heat until shimmering. Add onions and peppers and cook, stirring frequently, until softened and browned in spots, about 8 - 10 minutes. Add vinegar and sugar. Remove from heat and stir until sugar is dissolved. Season to taste with salt and pepper.
Meanwhile, prepare grill.
Prick sausages with a fork and grill, turning them, until golden and just cooked through (about 160° F. on a instant-read thermometer), roughly 10 to 15 minutes.
Halve sausages lengthwise and rolls horizontally and grill, cut sides down, 1 minute, or until sausages are cooked through but still juicy. At the point if you want toasted buns place cut side down for 1 or 2 minutes as well.
Divide peppers and onions between rolls and top with sausages.
