093 - Firecracker Shrimp

Firecracker Shrimp


1lb 71-90 ct., peeled & deveined shrimp - tail off
1 cup milk
1 cup corn starch
1 cup AP flour
1 cup mayo
1/2 cup sweet chili sauce
3 Tbs Srirachi chili sauce
1 Tbs toasted sesame oil
Oil for frying (aprox 2 cups) veggie or canola


Soak shrimp in milk for 20 minutes.


Add mayo, sweet chili sauce, and Srirachi to a food processor. Blend until well incorporated scraping sides when necessary. Turn machine to low and slowly add sesame oil.


Mix AP flour and cornstarch together in a bowl. Season with salt and pepper


Drain shrimp, shake off excess milk, then dredge in flour mixture


Have your frying oil at 350 - 375 degrees.  Fry in small batches. Shrimp is done when slightly golden & crispy (aprox 5 minutes)


Toss cooked shrimp in sauce and garnish with black sesame seeds and green onions
