4 pounds of yams or sweet potatoes 1/2 cup of heavy cream 3/4 cup of butter 1/3-1/2 cup of real maple syrup 1/3 of cup of bourbon or to taste 1 1/2 t. ground cinnamon 1 t. allspice 1/2 t. fresh grated nutmeg 1 1/2 cup roasted pecan pieces
Preheat the oven to 350' F. Bake yams until tender., 1 to 1 1/2 hours. Cool slightly. Peel and compost skins. Mash yams.
Heat on low the cream and butter until the butter melts. Add to yams along with the maple syrup, bourbon and spices. Adjust the amount of maple syrup and bourbon to your taste. Season with salt and pepper. Top with roasted pecans. Warm on low oven 275' for 30 minutes.
