058 - Pasta in Zucchini Sauce

Pasta w/ Zucchini Sauce

With zucchini in full force this time of year here's a great pasta dish that makes for a healthy, light summertime meal . . .

INGREDIENTS:
6 cups roughly chopped zucchini
2 cups diced onion
3 tablespoons minced garlic
1/2 cup shredded parm
1.5 cups chicken broth/stock
4 tablespoons olive oil (separated)
6 oz package of either arugala or spinach
1 bunch of parsley
1 container of ricotta cheese
1 box of orecchiette or gemelli pasta
crushed red pepper & salt to taste

INSTRUCTIONS:
Put 2 tablespoons of olive oil into a pan set on medium heat. Add onion and garlic and lightly saute until softened - roughly 5 minutes - and set aside. Meanwhile, in another saute pan heat olive oil on medium high, add chopped zucchini in batches so you don't overcrowd the pan (2 - 3 batches total depending on the size of your pan). Brown zucchini on both sides until done and set aside with onions and garlic. Put cooked zucchini, onions, garlic, shredded parm, & the greens you're using into a blender (you can do this step in batches if necessary) and blend while slowly adding chicken broth/stock until you reach a desired consistency. Return blended mixture to pan and keep warm until pasta is finished cooking. Dollop ricotta cheese on each serving and enjoy!
